dc.description.abstract | Los AGE (productos finales de glucosilación avanzada) se forman endógenamente y también durante la cocción de alimentos a altas temperaturas y poca humedad. Su consumo está relacionado con enfermedades crónico-degenerativas. Este estudio analiza características de la dieta y el consumo de AGE en mujeres embarazadas de distinto nivel socioeconómico. Se estudiaron a 86 mujeres embarazadas divididas en grupo A (nivel socioeconómico me-dio-alto) y grupo B (nivel medio y bajo). Se aplicó un registro de alimentos de tres días para obtener información sobre consumo de energía, macronutrimentos, AGE y características de dieta correcta. El grupo A reportó un consumo mayor de AGE (p = 0.008). Se encontró un consumo excesivo de energía (sin significancia). El grupo A presenta una dieta más completa; en ambos grupos la dieta es variada, pero sin equilibrio. Existe una asociación entre el consumo de AGE y el nivel socioeconómico. dc.description.abstractEnglish | AGEs (advanced glycosylation end products) are endogenously produced and also during high temperature and low humidity food cooking. AGE’s consumption is related with the in-cidence of chronic degenerative diseases. This study examines characteristics of the diet and consumption of AGEs in pregnant women from different socioeconomic levels. 86 pregnant women divided into two groups based on socioeconomic status (Group A medium-high level and group B medium and medium-low levels) were studied. The 3-day food diary was applied for information on energy consumption, macronutrients, AGEs and diet character-istics. Women in group A reported more AGEs consumed (p = 0.008). Excessive energy con-sumption was found in both groups (no significant difference). Group A has a more complete diet and in both groups their diet is varied but unbalanced. There is an association between consumption of AGEs and socioeconomic levels. More studies are needed. | - |
