dc.description.abstractEl objetivo de este trabajo fue determinar si la calidad de los agaves guanajuatenses es igual a la de los cultivados en Jalisco. Se realizó un estudio comparativo del contenido de azúcares de los agaves (A. tequilana Weber) cultivados en ambos estados. Se emplearon datos de azúcares reductores totales (%ART) agrupados en dos períodos y grados Brix (°Bx) de muestras de jugo crudo, proporcionados por una tequilera de la región: agosto a diciembre de 1998 y de enero a mayo del 2000. Los datos se procesaron estadísticamente aplicando un análisis de varianza y prueba de Tukey para comparación de medias. Se determinó la correlación entre los °Bx y el %ART. En el primer período, la media del %ART para el proveedor de Manuel Doblado, Gto. fue de 24.43 ±2.29 y no presentó diferencia estadística significativa (p<0.05) con los proveedores de los Altos, Jal. En el segundo período la media para el proveedor de Pénjamo, Gto. fue de 26.78±5.96 y fue estadísticamente igual a los proveedores 4, 5, 6, 7 y 9 de los Altos, Jal. La correlación entre %ART y ºBx fue de 0.9621 significativa a un nivel del 1%. Se concluye que según el contenido de azúcares, los agaves guanajuatenses son de buena calidad y no presentaron diferencia estadística significativa con respecto a los cultivados por 7 proveedores del estado de Jalisco.es_MX

dc.description.abstractEnglishThe objetive of this work was to determine if the quality of Guanajuato agaves is equal to the agaves cultivated in Jalisco. A comparative study was made of the sugar content of the agave (A. tequilana Weber) cultivated in both states. Used were data of total reducing sugars (%TRS) and Brix degrees (ºBx) of raw juice samples provided by a tequilera of the region between August and December, 1998 and January and May, 2000. The data were statistically processed, applying an ANOVA analysis and a Tukey test to compare the media and the correlation between °Bx and %TRS was made. In the first period, the media %TRS from the supplier of Manuel Doblado, Gto. was 24.43 ±2.29 and did not show a significant statistical difference (p<0.05) with the suppliers of Los Altos, Jal. In the second period, the media of the suppliers of Pénjamo, Gto. was 26.78±5.96 and was equal statistically to suppliers 4, 5, 6, 7 y 9 of Los Altos, Jal. The correlation between %TRS and °Bx of 0.9621 was significant to a level of 1%. One concludes that, according to sugar count, the agaves from Guanajuato are of good quality and do not present a significant statistical difference with respect to those cultivated by seven suppliers from the state of Jalisco.en
