dc.description.abstract | En el presente trabajo se evalúa la dependencia de la viscosidad (h) respecto a la tempera-tura (20 ºC - 80 ºC) y a los grados Brix (0.2 - 0.6) para el mucílago de nopal (Opuntia spi-nulifera). El valor máximo de h20ºC fue de 1091.5 cSt a 0.6 ºBx de mucílago. Los resultados muestran la variación de la h respecto a los sólidos solubles (ºBx) para cada temperatura estudiada. El mucílago mostró comportamiento no-newtoniano. | es_MX |

The maximum value of h20ºC was 10915 cSt at 0.6 ºBx of mucilage. The results show, the variation of the viscosity on soluble solids (ºBx) for each temperature studied.
